I haven’t grown okra for 30 years. Mine was green, and I harvested when it was finger length and looked like something for sale at the store. In your situation I’d harvest all three and test for flavor, toughness, and so on. Cutting off large ones will leave more of the plant’s energy available to set more fruit.
